Zucchini Bread


Does anyone have a good zucchini bread recipe? We recently made this recipe. I chose it because it called for vegetable oil instead of butter, and I was able to use a substitute for the eggs. It was edible, but not what I was hoping for. I'm wanting to recreate the zucchini walnut bread from Jamba Juice, it's so, so good and much better than the loaves I made.

I have been loving this one - it does call for eggs, though - 1/4 cup oil, 2/3 cup honey, 2 eggs, 1/2 cup buttermilk, 1 cup grated zucchini (I often add 2 cups), 1 3/4 cups whole wheat pastry flour (I use 1/2 cup millet), 1 T. baking powder, 1/2 t. baking soda, 1 t. cinnamon, 1/2 t. ground ginger. Bake at 325 for 55 minutes.

i have a good recipe that i actually tinkered with and made myself. it is not vegan though, but i also use vegi oil instead of butter so i bet it would be fine with the egg substitute. i will get it out and send to you!

I recently used this one, but cut down on the sugar a bit and added raisins. (I also used gf flours, but obviously you wont have to do that.) I put it in a 9x13 pan, but I am assuming you could use a bread pan. :)
