We, being the good Irish that we are, absolutely love, love, love our potatoes. We especially loved them mashed and potato chowder. I don't have a special recipe for either--sorry!
My husband has taken to putting the red ones in a skillet with onions (both from CSA) and adding a little local bacon, but I know that won't appeal to you at all! If we have to eat meat, this is a good one--it was mentioned in Michael Pollan's Omnivore's Dilemma--but I still opt for the meat-free version.
Oh and hash browns... with cheese... sigh. It doesn't take much to get me hungry these days! :)
