One of our favorite meals around here is a couscous salad I've come up with. Burl absolute loves it and would eat it nearly every night if he could.
It goes a little something like this:
Several cups of prepared couscous 2 cups garbanzo beans 1 red bell pepper 1 carrot 1 tomato 1 jalapeno 1/2 cup cilantro 1 cup raw slivered almonds 1/2 cup green onions 2 lemons, the zest and juice 1/4 cup olive oil 1 tablespoon cumin salt
Of course you can make is as spicy as you like, and add or omit ingredients to your liking.
