Each week, my little family reserves Monday night for family night. We choose a basic principle - like sharing, honesty, or prayer- talk about it, play little games to reinforce the idea, sing songs, and then we bake cookies. I've been trying some different recipe that don't contain sugar, and this is a favorite.
Honey Apple Cookies
- 1/2 cup butter, softened
- 1/2 cup honey
- 1 egg
- 1 teaspoon vanilla extract
- 3/4 cup stone ground whole wheat flour
- 1/2 teaspoon baking soda
- 3/4 teaspoon ground cinnamon
- 1 1/2 cups ground oats
- 1 apple, shredded
Cream the butter, add the honey, add egg and vanilla. Combine dry ingredients then add to the wet. Stir in oats and apple. I sometimes add a shredded carrot, nuts or sunflower seeds. Bake for 9-10 minutes at 375 degrees.

Thanks for the inspiration and recipe! My oldest doesn't tolerate apples well, so I made a variation of these tonight for him to take to school this week. And they are awesome. Have a good week!
