Zucchini Bread, Take Two







What do you do with more volunteer zucchini than you could ever hope for? Why, make Zucchini bread of course.

I didn't plant zucchini this year, but as sprouts started emerging, blossoms started blooming and fruits started growing, I found a few zucchini plants growing full speed. A seed or two must have survived over the winter and found their way into my pumpkin patch.

In my search for the perfect recipe, I found the Paula Dean version, which is exactly what I was looking for. The only change I make is using orange juice rather than water. Yesterday, my boys and I harvested our last zucchini of the year, made several loaves and added them to the others we have in our freezer. We sliced and froze individual pieces to make for a quick breakfast or snack in the upcoming winter mornings.

yum! this is really similar to my grandma's recipe which is so delicious! curious how you freeze them? (like what to you store/wrap them in?)

We love zucchini pizza! You use zucchini instead of dough. A great ans super yummy way to use up all those veggies :)
